Coconut Curry Shrimp
Ingredients
1. In a frying pan, heat coconut oil over medium heat 2. Add onion and cook stirring until tender, about 5 minutes 3. Stir in garlic, ginger, cumin, garam masala, and curry powder. Cook for about 1 minute. 4. Add tomato and red pepper. Cook stirring for about 2 minutes 5. Stir in shrimp and cook for 3 to 4 minutes until pink and cooked 6. Stir in lemon and coriander Serve over brown rice or quinoa. Enjoy! Serves 2-3 |
