Coconut Flour Pancakes

This recipe for coconut flour pancakes, is nutritious, tasty, and very satisfying.  It contains coconut oil, a healthy fat, that helps improve the immune system and promote the efficient burning of energy (See my article on Coconut Oil).  This recipe is low carb, low GI, and gluten free.  And the best part is it’s super simple to make.  I love having it for breakfast topped with fresh fruit (or frozen fruit warmed up to create a sauce) and some cinnamon.

These are great for a quick snack or treat.  They are very simple to make and have simple wholesome ingredients with just a touch of sugar.  The  best part is you don't even have to bake them.

Moroccan Salad 

I came up with this recipe on a Saturday afternoon as I was trying to figure out what to have for lunch.  It’s so delicious, healthy, and filling and it’s simple to make!  I wanted to ensure I was still getting a healthy source of protein and also something that was quick to make because I’m usually pretty limited on time.  This salad contains tofu and Moroccan herbs and spices like mint and cumin.  The tofu supplies protein to the salad and the herbs and spices I use are anti-inflammatory and high in anti-oxidants.  They add a ton of flavour without the calories, plus you’re getting a lot of vegetables with this salad.   Enjoy!
