Moroccan Salad
I came up with this recipe on a Saturday afternoon as I was trying to figure out what to have for lunch. It’s so delicious,
healthy, and filling and it’s simple to make! I wanted to ensure I was still getting a
healthy source of protein and also something that was quick to make because I’m
usually pretty limited on time. This salad contains tofu and Moroccan herbs and spices like mint and cumin. The tofu supplies protein to the salad and
the herbs and spices I use are anti-inflammatory and high in
anti-oxidants. They add a ton of flavour
without the calories, plus you’re getting a lot of vegetables with this
